Authentic Regional Culinary Experience

In this project, students will explore the abundance of Chinese regional cuisines and learn about their geological, cultural and historical significance of food. As ambassadors, they will help incoming Chinese students adjust to the new campus dining environment in Arizona and create an interculturally welcoming dining experience. A qualified bilingual menu will be presented and advocated to the campus food service.

Launching the Project

Familiarize the ingredients for Chinese food

Students will explore Mekong and Lili supermarkets locally in Phoenix, Arizona to identify and record their ingredients of choice.

Task Extension

1) Help students get familiar with key ingredients before the field trip;

2) Provide a survivor sheet with various key ingredients during the trip;

3) Check students grasp of the key ingredients after the trip;

4) Reflect on the difference of the key ingredients with what they normally have for meals at their homes.

Brainstorm on Driving Question

Use https://answergarden.ch/ to get students to brainstorm possible social/cultural issues associated with the driving question "How can we help incoming international Chinese students get access to culturally authentic Chinese food?"

Task Extension

1) Write three words that associate with Chinese food in America

2) Write three words that associate with Authentic Chinese food

3) Compare the answers of the above two questions and write one sentence about your reflection.

Managing the Project

Visit and Taste

Students will visit several local Chinese restaurants, ordering food from different regions and taking notes based on their understanding of authentic Chinese food (in terms of ingredients, presentation, etc.)

Students will, with the help of the survival sheet (for ordering food)

1) recognize food items

2) order food with table manners/etiquette associated with dining in a Chinese restaurant

3) take pictures of food items

4) take notes of the characteristics of food items

5) take notes on your peer's performance of ordering food (anything interesting/akward/strange/wonderful happened?)

Report on food tasting

Write a short report after visiting and dining in a Chinese restaurant. Students will

1) include three dishes - one dish that is appealing, one dish that is strange, one dish that he/she likes the most

2) describe one dish in details

3) reflect on this dining experience - what is most exciting? what is most akward? what you learn?

4) no less than 50 characters in total

Peer-Review

Read at least TWO of your classmates' journals and provide your feedback/comments in L1. (no less than 200 words)

Is your peer's experience similiar to yours? What is similiar? What is different?

What did you learn from this dining experience? Did it change the way you view Chinese food? How about authentic Chinese food?

What does "authenticity" mean to you?
